Sizzling Summer Chicken Fajitas

I love finding great recipes that not only taste good but are easy to make, and sharing them with all of you!! Enjoy~

Ingredients:
1 Tbl olive oil
2 Tbl fresh lemon juice
1 tsp salt
1 tsp chili powder
1 tsp ground cumin
1/2 c fresh cilantro leaves, chopped
4 boneless, skinless chicken breasts, haved
16 whole green onions
8 flour tortillas

Garnishes:
Monterey Jack cheese, shredded
tomatoes, diced
sour cream

*you can substitute corn tortillas instead of flour and you can use grilled peppers in place of the green onions.

1. Combine olive oil, lemon juice, salt, chili powder, cumin, and cilantro in a plastic zip lock bag. Add chicken breasts and shake gently to coat with the mixture. Marinate in the refrigerator for 30-45 min.
2. Preheat grill to medium-high
3. Grill green onions for about 30 sec, or until wilted. (Grilling peppers will take longer, approx 15-20 min.) Remove from the grill and slice in thirds. Set aside
4. Grill chicken, turning occasionally, for 7-8 min, or until cooked through. Remove from the grill and slice into diagonal strips.
5. Warm tortillas on the grill for 10-15 seconds on each side.
6. Place chicken and onions on tortillas and serve with garnishes.

Zumba Fundraiser for the 2011 WG Relay for Life

We ROCKED the house Celebrating Life and raising fund for the American Cancer Society via the 2011 Willow Glen Relay for Life. My team, Zumba San Jose - Bodiez In Motion, has raised over $1700.00 and we are not done yet.

Introducing Day of Dance

Join me Saturday, Feb. 26th for the Day of Dance put on by El Camino Hospital. I will be teaching Zumba and there will be several other groups performing. We will be celebrating health and be learning about cardiovascular disease. This is a free event to the public. Grab your dancing shoes and invite your friends and loved ones to join in on the fun!!


Parking: Please park in the El Camino Hospital parking garage at the corner of North Drive and Hospital Drive (2490 Hospital Drive, Mountain View). There is an open gate at the corner of the fence behind the parking garage to get to Saint Francis. There will be signs and balloons to direct you.

Cranberry Pecan Bars

This recipe is from Jenny Craig. These cranberry pecan bars taste incredible and are simple to make. They would be great as a snack or have with breakfast. Hope you enjoy!

Ingredients:
1/2 c margarine
1 cup all-purpose flour
1/2 c packed brown sugar
1 tsp finely grated orange peel
1/2 c fresh orange juice
1 egg
1/2 tsp baking powder
1/4 tsp baking soda
1/2 c chopped pecans
1/2 c dried cranberries
powdered sugar

Directions:
Preheat oven to 350 degrees. In a mixing bowl, beat margarine with electric mixer on medium speed for 30 seconds. Add about half the flour and half of the orange juice, brown sugar, orange peel, egg, baking powder and baking soda. Beat until thoroughly combined. Beat in remaining flour and orange juice. Stir in pecans and cranberries. Spread into ungreased cookie 11 x 7 x 1 1 1/2 inch baking pan. Bake at 350 degrees for about 25 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on a wire rack. Sift powdered sugar over the top. Cut into bars. Yield: 24 servings.
Per Serving: 1 Starch, 1 Fat

Healthy Mini Mushroom Meatloaves

This recipe is so easy, very flavorful and healthy. I am not a huge mushroom fan but I could hardly tell there were mushrooms in the recipe. Hope you try this fabulous recipe and enjoy!

Cooking Spray
1 pound ground turkey
2 4-ounce cans Giorgio, Brandywine, or Penn Dutch mushrooms, stems and pieces, drained
1 cup rolled oats (I used quick oats because that is all I had on hand)
1 egg or 1/4 cup egg substitute
1/3 chopped onion
1/2 tsp salt
1/4 tsp ground pepper
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
1/4 tsp dried thyme

1. Preheat oven to 350 degrees. Spray a 12 cup muffin pan with cooking spray.
2. In a large bowl, mix together turkey, mushrooms, oats, egg, onion, salt, pepper, Worcestershire sauce, ketchup, and thyme.
3. Divide the mixture into 12 balls, or even easier, use an ice cream scoop, and place in the muffin cups.
4. Bake for 30 minutes, or until internal temperature is 160 degrees.
Makes 6 servings
